Masala Idly or stuffed idly is an easy variation from the regular idlies that we make at our households. This way family at home will enjoy idly and you also present a creative idly and can win accolades. I tasted this dish when I was about 15 years at one of my cousin's place. She made stuffed idly and I became an instant fan of it. However, I never got a chance to have it again all these years, but the taste lingered in my mind always. Here is the recipe for stuffed idly:

What's Required:
- Idly batter - 3 cups
- Onions - 2, finely cut
- Bell Pepper - 1/2 finely cut, Any color
- Potato - 2, cut into small cubes
- Chilli powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1/2 teaspoon
- Jeera - 1/2 teaspoon
- Salt to taste
- Asafoetida - pinch
- Cooking Oil - 2 teaspoons
- Gingelly oil to coat the idly plate
How to make:
- Heat oil in a pan, add jeera.
- When jeera splutters, add onions and fry till they are transparent.
- Now add bell pepper and fry well.
- Add cut potatoes and all the masala powders mentioned above.
- Add about 1 1/2 cup water. Add salt and mix well.
- Let the vegetables boil, cook till potatoes become soft or mushy.
- Do not make the masala too dry, let it be greasy.
- Apply oil to each of the groove in the idly plate.
- Add about 1/2 ladle batter. Add the masala on top of the batter layer. Add another 1/2 ladle of batter to cover the masala.
- Repeat for all idlies and steam for about 5-7 minutes.
- Allow the idly plate to cool and then remove idlies and garnish with coriander.
- Serve hot with ginger/coconut/tomato chutney or milagai podi.

Tips:
- Depending on the size of groove on your idly plate, adjust batter and masala quantity.
- You can add many other vegetables like french beans, green peas, grated carrot and even about 2 teaspoons grated coconut to make the masala.
- This idly can be served as is without any accompaniment as well. The masala stuffed will take care of the taste.
