What's Required:
- Cauliflower Florets cut into small pieces or grated - 1/2 cup
- Onion, finely cut - 1
- Green Peas (optional) - about 50gm
- Carrot grated (optional) - 1 tbsp
- Cooked Rice - 1 -1/2cup
- Ghee/Oil - 2 teaspoon
- Garlic, finely sliced/crushed - 4-5 cloves
- Green chillies, finely cut - 2-3
- Asafoetia - pinch
- Coriander leaves - To garnish
- Lime juice (optional) - 1 teaspoon
- Salt to taste
How To Prepare
- Wash cauliflower thoroughly and remove the hard stems from the florets. Cut the florets into small pieces or grate each floret (obviously, grating is much easier).
- In a wok, add ghee/oil, and add the crushed or finely cut garlic. Once garlic starts to turn brown ,add finely cut green chillies. Then add the asafoetida. Be careful while adding chillies as they will splutter out.
- Now add onions and saute till they are translucent.
- Add cauliflower, mix well, then add green peas, add 1/4 cup water and let the cauliflower and green peas cook for about 4-5 minutes.
- If water is still left out in the wok, allow it to cook off before adding rice. Make sure to dry the vegetable mixture completely before adding rice, else the final dish will become soggy.
- Once cauliflower is cooked, add salt and mix well.
- Now add the cooked rice and mix well, check for salt after mixing rice.
- turn off flame after a few seconds of adding rice.
- Now add the grated carrot, lime juice and mix.
- Allow the rice and flavors to settle for about 5 minutes. Garnish with coriander leaves.
- Cauliflower rice is now ready to be served. Serve hot with raitha/papad/pickle.
Options/Variations
- As I have already mentioned, green peas, carrot and other vegetables are optional. Add them for a more healthy recipe or to make the rice look colorful.
- You can also cook the cauliflower and other vegetables separately and then simply add the required ingredients and mix with rice.
- Add pulao masala to this rice, and it will become cauliflower pulao. If adding pulao masala, add it to the vegetables just before adding rice.
- Making this rice with ghee gives it a smoky flavor, which also adds to the taste.
