Saturday afternoon, lazy to cook after a week long hectic schedule. I just had some left over rice and some remaining vegetables at home. So thought of cooking up a one pot meal and finish the task. I also wanted to make something different so that I can happily post here!

So let's get started:

What's required:
- Leftover rice - 2 cups
- Pudina/Mint leaves - 1 tbsp, wash and cut finely
- Cabbage, carrot, French beans, Bell pepper(green) - 1 cup
- Onions - 2
- Ground pepper - 1/2 teaspoon
- Chilli sauce - 3 teaspoons
- Salt to taste
- Asafoetida - pinch
- Cloves - 2
- Bay leaf - 1/2
- Garlic - 3 pieces
- Ginger - 1/2 teaspoon finely cut
- Cooking oil - 3 teaspoons
- Boil about 1 cup of water and add the vegetables except onion.
- Steam the vegetables till they are about 3/4 cooked and keep aside
- Heat a pan and add 3 teaspoons of oil to it.
- Add asafoetida, cloves and bay leaf. Wait till the aroma rises
- Crush together ginger and garlic and add to the pan.
- Saute well and then add onions.
- Once onions are sauteed well, add finely cut pudina
- Wait till pudina turns pale.
- Add the cooked vegetables and saute well.
- Now add salt and chilli sauce. Mix well and cook for about 2-3 minutes
- Now simmer flame and add rice.
- Mix well and add pepper.
- Make sure rice is not mashed while mixing.
- Serve hot with cucumber raita.
Tips:
- You can make this with fresh rice as well.
- If rice is cooked evenly, somewhat like for other variety rice or biryani, fried rice looks really yummy.
- You can also add other vegetables like matar (green peas), corn, spring onions etc. however, avoid adding potatoes for fried rice as potato can make fried rice soggy.
- This fried rice can be easily converted into pulao, by adding about 1 tbsp pulao masala. Skip pepper, if you want to make pulao.
- I have not used pudina paste as it will give green color to the rice.
