Mango Curry is an authentic Mangalorean-Konkani dish made of Sindhura mangoes. This curry is sweet and spicy and can be easily served as a dessert or even a starter for that matter!I am not a great mango lover, but this curry just makes me crave for more of mangoes! Whats Required:
- Sindhura Mangoes Baby mangoes - 2
- Jaggery - 1 tbsp
- Green chillies - 2, slit them lengthwise
- Mustard - 1/2 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - pinch
- Asafoetida - pinch
- Curry leaves - 5-6
- Cooking Oil - 2 teaspoons
- Maida/All purpose flour - 1-2 teaspoon
How to Make:
- Peel the mango skin and squeeze them completely into a bowl. Do not throw the seeds.
- Melt jaggery in about 1 cup of water. Filter to remove any impurities.
- Add the jaggery water to the squeezed mangoes and mix well. Make sure to crush any big mango lumps, other than that no need to make a smooth mixture.
- Heat oil in a wok/kadai, and add mustard.
- When mustard splutters, add asafoetida, curry leaves and green chillies.
- When chillies are fried, add the mango-jaggery mixture and the mango seeds.
- Add turmeric powder and salt.
- Make a fine paste of maida with water and add to the curry and mix well.
- Let it boil or 5 minutes.
- Remove from heat and serve hot. Alternately, you can cool and serve as well.
Tips:
- This curry tastes good only with Sindhura mangoes. I have tried with other mangoes, it tastes good, but doesn't taste the same.
- You can also add maida directly to the curry, ensure there are no lumps formed and it is mixed well.
- If the curry tastes less sweet, you can add sugar at the end and mix well.
