My first ever recipe post starts with Beetroot Halwa. Here I go with the recipe.

3 medium sized Beetroots, peeled and grated
Sugar 1/2 cup
Honey 2-3 tbsp
Milk 1.5 cups
Condensed milk 1 cup
Dry fruits - Badam/almonds, Cashew/Kaju and Raisins/Kismis
Ghee 3 tbsp
Heavy bottomed pan

Beetroot is a vegetable that many of us run away from, may be because of the color or taste or smell. But if cooked right and well, beetroot can lose its smell to a great extent and taste good as well. Halwa is one way of stuffing your family with this vegetable. Here are some very well-known benefits about beetroot:

How to Make:
- Take about 2 cups of milk and condense it so that it reduces to half. Condensing is boiling milk in low temperature so that it reduces in quantity.
- Keep the condensed milk aside
- Soak the badam in water till it becomes soft. Peel the skin and cut into small pieces
- Add about 2 teaspoons of ghee in the pan.
- Add cut badam, fry for a few seconds, then add cashews and then add kismis. Fry till they are golden brown in color. Remove from pan and keep aside
- Add 3 tbsp of ghee in the same pan. Add the grated beetroot and saute well
- Ensure to saute till the raw smell of beetroot goes away. You require a lot of patience here. If the beetroots remain raw, the halwa will not taste as expected
- Once the beetroot has been sauteed well, add all the milk and allow the beetroot to cook in the milk
- This will take about 20-25 min if you cook in a medium/low flame
- Once the beetroot has cooked well and there is still some milk left in the pan, add sugar and 2tbsp of honey.
- Raise the flame and let the milk dry off so that the halwa thickens
- Taste and add honey if more sweet is required.
- Once the halwa has thickened well, remove from flame and allow to cool
- Transfer to a bowl or air-tight box and add the fried nuts to it. Add a teaspoon of ghee on top
Tips:
- I have added badam/almonds as it is as that's how I like it. It's simply coated with ghee.
- Add the sugar while there is still some milk left in the pan while cooking the beetroot. This will ensure, sugar is melted and gets mixed well
- Reducing the quantity of sugar and adding honey instead is a health factor. You can choose to add honey/suager completely
- Honey can be added at the end if more sweet is required
