So I am back with another recipe. A simple, easy to make salad that can act as starter for a kitty party or even a meal in itself.What's special about this salad is that this was made by my husband! See the pics and you can already see its yum..
Here we go:
Time Required: 30 min
1 potato boiled
1 onion
1 tomato
1/2 green capsicum
1/2 yellow capsicum
1/2 red capsicum
1/2 cucumber
Cabbage shreds
2 tbsp Mexican Cheese spread
Pepper grounded
1 teaspoon Lime juice
Salt to taste

How to make: Whats required:
- Cut all the vegetables into medium sized cubes.Boil 2 cups of water and add all the cut vegetables except potato.
- Boil only for 2-3 minutes, ensuring all the vegetables are only half-boiled.
- In a bowl, add 1 tbsp of cheese spread.
- Add the all the vegetables.
- Now add salt, pepper and the lime juice.
- Then add the remaining cheese spread.
- Mix well, garnish with broccoli leaf
- You can add mayonnaise instead of cheese spread
- You can also choose to add the vegetables raw.
- You can add various different vegetables to the salad and make it look colorful and also healthy.
- Adding mayonnaise or cheese is optional, you can choose to keep the salad healthy without them and keep all the other ingredients.
- You can add boiled eggs to the salad as well. Boil 2 eggs, cut them into medium sized pieces and add to the salad just before you add salt, pepper and lime juice.
- For a sweet tooth, you can add honey and dry fruits to the vegetables and make it completely healthy.
